From Garden to Table at Palm River Hotel

In modern life, an empty fridge means a trip to the grocery store to collect food that’s packaged, labelled and transported from somewhere else. Large-scale farming is an industry that feeds millions the world over and enables the larger workings of modern life, but somewhere in the efficiency of it all, we forget that growing food is accessible to everybody. A simple investment in nourishment and self-sufficiency, as old as human settlement itself.

At Palm River Hotel, we haven’t forgotten this, and find a particular satisfaction in knowing exactly where our food comes from. The tomatoes in your salsa were growing in the garden outside just this morning. The herbs in your sauce were cut a few hours ago, a short walk from where you are sitting now. With many more examples to boot!

Among the finest Victoria Falls restaurants for locally sourced, seasonal cuisine is our very own Palm River Hotel Restaurant, where we source from our on-site vegetable plantation as much as possible. It supplies fresh produce directly to our kitchen, as well as to the kitchen of our sister property, Ilala Lodge Hotel.

It is one of our favourite things about the way we cook here, and it is worth telling the story properly.

 

About the Plantation

Our vegetable plantation is on the hotel’s grounds, making the most of conditions that, quite frankly, could not be better-suited to growing food! Victoria Falls’ soils are rich and deep, nourished by seasonal rains and the Zambezi River itself. Our climate is warm and sunny for much of the year, and our borehole water supply ensures a consistent source of irrigation regardless of season.

The plantation is made up of a series of greenhouses and herb troughs, which allow us to grow a range of produce year-round and protect more delicate crops during the wetter months. It is fertilised using organic compost (also produced on-site) as part of our broader commitment to reducing waste and closing the loop between what the hotel produces and what it puts back into the earth.

What grows in our garden?

The kitchen team works closely with the plantation to plan menus around what is ready to harvest.

The result?

A living, productive garden that supplies both Palm River Hotel and Ilala Lodge Hotel with a fresh, consistent, and self-sufficient source of ingredients, reducing food miles, supporting quality, and ensuring that what arrives on your plate has been grown with care and intention.

From the Garden to the Kitchen

The relationship between our plantation and our kitchen is a close one. Our chefs know what is growing, what is at its peak, and what will be ready by the weekend. This informs the menu in a way that no supply chain can replicate: Dishes are built around what is freshest, not the other way around.

You will taste the difference. Garden-harvested tomatoes, cucumbers, and avocado appear in the salsa that accompanies our pan-roasted Zambezi Bream – bright, flavourful, and a world away from anything that has spent days in transit. Fresh green beans from the garden find their way alongside our pan-fried Nyanga Trout, paired with crushed potato and olives.

Our weekly specials are where the plantation’s influence is felt most freely: the kitchen uses what is at its abundant best that week, experimenting and innovating with whatever the garden offers up.

Herbs are perhaps the most immediate expression of this. Fresh basil, coriander, and rosemary, cut the same morning, are used, bringing a vibrancy to sauces, dressings, and marinades that is simply not achievable any other way. When herbs are this fresh, they do not need much encouragement. A little heat, a little oil, and they speak for themselves!

Fresh Food is Good for You

There is growing evidence that the nutritional value of fresh produce begins to decline almost immediately after harvesting. The shorter the journey from soil to plate, the more vitamins, minerals, and natural compounds remain intact. At Palm River Hotel, that journey is measured in metres and hours, rather than kilometres and days.

For guests, this means ultra-nourishing food, with salad leaves that arrive at your table still carrying the mineral richness of Zambezi soil and herbs that retain the essential oils that give them both their flavour and their nutritional potency.

For us, farm-to-table, or rather – plantation to plate – is not a gimmick, but a sincere commitment to the quality of your experience.
